From the Biscuit Barrel – one for the kids “Pizza Cookie”!

July 20, 2012

The school summer holidays are here, and if the wet weather continues you’ll most likely need a variety of activities planned in order to keep the kids from boredom!  If baking together in the kitchen is something you might do, why not try these “Pizza Cookies”?  They’re fun, they’re easy and, most importantly, they’re totally Y-U-M-M-Y!!!

Jobs for Mum/Dad!

Buy all the ingredients (don’t worry, most will likely already be in your store cupboard, plus a selection of sweeties of course)….

Giant Cookie-Pizza: 115g (4oz) unsalted butter, 200g (7oz) caster sugar, 1 large egg, 1 tsp vanilla or almond extract, 225g (8oz) plain flour, half tsp of bicarbonate of soda

Topping: 115g (4oz) unsalted butter, 250g (9oz) icing sugar, 115g (4.5oz) cream cheese…. plus a variety of sweeties – I like Jelly Tots, Smarties and White Chocolate Buttons

Turn on the oven to Gas mark 4 (175 degC / 350deg F) and line a large baking tray with greaseproof paper.

Put the butter and caster sugar in a mixer and cream until light and fluffy.  Add the egg and vanilla/almond extract and mix again.  Add the flour and bicarbonate of soda and mix until a dough starts to form.  You can sift the flour if you like, but quite honestly it’s never been a problem when I haven’t!

Tip the dough onto a lightly floured work surface and lightly squish together the mixture until you get a ball of dough.  Now you, or the kids, can place this in the centre of the baking tray and (using your hand) just pat the dough down into a circular shape approximately 8/10 inches across.

Bake in the centre of the oven for approximately 20 minutes until golden brown.  Bring it out of the oven and let it cool for a while before transferring to a wire rack until completely cold.

Meanwhile, make the topping.

Beat together the cream cheese, icing sugar and unsalted butter…. it needs to be smooth, so probably best to sift the icing sugar.

When the cookie is cold, spread this mixture onto the big old cookie/pizza.

Finally, let the kids loose with the sweeties!  Scatter them all over the cream cheese mix…. place on a serving dish and cut into slices. Enjoy!

PS: If you’d like a slightly “healthier” version of this pizza I’ll be posting a fresh fruit version in a couple of days.
